Kogegrej til massekogeplader skal: - Dække hele kogepladen, det må gerne være lidt større. - Være plant eller bue let indad (max. 1 mm), da bunden ved opvarmning vil bue udad. - Være tykbundet: - Aluminiumsgryder min. 3,5 mm bundtykkelse. - Stålgryder min. 5 mm bundtykkelse. - Pander min. 5-7 mm bundtykkelse. Kontrollér kogegrejets planhed ved at stille kogegrejet med bunden opad på en bordplade og holde en lineal på bunden. En buet bund, såvel indadbuet som udadbuet, forlænger kogetiden og øger energiforbruget. Kogegrej med en buet bund kan let snurre på pladen. Hvis bundens diameter er for lille, øges energiforbruget, og maden brænder lettere fast, hvis den koger over. Det materiale, som gryder og stegepander er lavet af, er mindre vigtigt end bundens diameter og planhed, hvad angår kogetid og energiforbrug.
