Whilst this is a photo copy, and some of the pages are a little askew, it was all readable and intact. A real bonus finding an old manual for a classic piece of kit that no other site had.
Great stuff.

Thanks to Owner-Manuals.com! This manual was exactly what I needed. As Amana was purchased by Maytag and later by Whirlpool, there was no way to receive it from their websites. I was lucky to find this resource.
HOB 481/S
PRODUCT DESCRIPTION SHEET
USE OF THE HOB
Press the front button of Section A to switch the hob on. Select and press the button for the cooking zone required, in section B. Select the cooking temperature required with the +/- buttons of section C (considering that 9 is the maximum position and 1 the minimum). The booster can be used to reach the temperature required more quickly. Select the cooking zone required as usual, use the + button to select the maximum power position 9, press button + of section C again so that the letter A appears. This will alternate with the number 9. At this point the final cooking position required (normal cooking 5/6) can be set by means of the button of section C. The booster will continue to flash for the time needed to reach the temperature chosen as quickly as possible; once this is reached the display stops flashing and the cooking temperature stays on the position chosen. If necessary, e.g. to prevent children changing the cooking times/mode selected or to clean the surface of the glass ceramic hob, the functions of the working area can be locked by pressing the button with the key symbol, in section D.
