La cocción al grill
Generalmente se cocinan a la parrilla pescados o carnes que no tengan un gran espesor, aves abiertas por la mitad y aplanadas, algunas verduras ( por ej. calabacines, berenjenas, tomates, etc.), espetones de carne, de pescado y mariscos. La carne y el pescado que se cocinan a la parrilla generalmente deben ser untados con aceite y colocados siempre sobre la parrilla. Sale la carne al final, y sale el pescado en el interior antes de cocinarlo. Coloque la parrilla en los rieles más cerca o más lejos del grill según el espesor de la carne para evitar quemarla en la superficie y cocerla poco en su interior. Derritiendo uno o dos vasos de agua en el hueco de la placa recojedora de grasas se evitará la formación de humo debido al goteo de los jugos o grasas. El grill se puede emplear también para gratinar o para tostar el pan.

Tiempos de cocción
Los tiempos de cocción pueden variar según el tipo de comidas, su homogeneidad y su volumen. Se aconseja vigilar las primeras cocciones y comprobar sus resultados ya que realizando los mismos platos en las mismas condiciones se logran resultados parecidos. A título de indicación presentamos seguidamente una tabla de tiempos-temperaturas relativas a las cocciones en el horno y en el grill. La experiencia sugerirá en futuro posibles cambios en los valores contenidos en la tabla misma. Cumpla atentamente con las indicaciones de las recetas que entiende realizar. Atención! No recubra el horno con papel de aluminio. No coloque cacerolas sobre la solera del horno, la grasera o la placa de pastelería. Podría producirse una acumulación de calor que perjudicaría el resultado de la cocción y estropearía el esmalte. Verifique que las rejillas del horno estén colocadas correctamente (fig. 8). Fig. 8
